Arrowroot is a powdery, highly digestible starch and makes a great substitution for cornstarch and flour. It can work as a thickening agent in sauces, gravies, pie fillings, and puddings. It also makes clear, shimmering fruit gels and prevents ice crystals from forming in homemade ice cream. Arrowroot is neutral tasting and does not react negatively to acidic ingredients, such as citrus. It must, however, be cooked over low heat since it does not endure high temperature cooking and does not reheat well.

To preserve natural flavor, store in a cool, dry area in sealed containers for shelf life of up to 18 months from date of manufucture without loss of flavor and/or functionality.
