Bay leaves are the large, olive-green leaves, of the sweet bay or laurel tree, and have a very provocative aroma and flavor. The leaves should be stiff and brittle, with a smooth and slightly shiny surface. One leaf can go a long way with its strong, spicy flavor. They can be used with almost everything from meat and fish dishes to pasta and sweet dishes. They release their flavor during slow cooking, so the longer they cook, the better. To preserve natural flavor, store in a cool, dry area in sealed containers for shelf life of up to 18 months from date of manufucture without loss of flavor and/or functionality.
