Star anise is the unusual fruit of a small evergreen tree which grows in southwestern China and Japan. The fruit is picked before it can ripen, and dried. The whole stars can be added directly to the cooking pot or can be ground, as required. Use small amounts, as the spice has a strong, distinct, sweet and spicy flavor, similar to licorice.
