Roasted Red Pepper Cioppino (Italian Fish Stew) with Garlic ToastIngredients & Instructions
Ingredients:- 1 Small Onion, finely diced
- 2 Garlic Cloves, minced
- 2 Tbs. Olive Oil
- ¾ lb. Small Scallops
- ¾ lb. Salad Shrimp
- 1 Gal. Water
- 6 oz. Tomato Paste
- 3 oz. Karlsburger Roasted Red Pepper Base
- 1 oz. Karlsburger Seafood Base
- 1 Tbs. Karlsburger Italian Seasoning
- 1 lb. Surimi Flakes (or shredded)
- 3 Karlsburger Bay Leaves
Cooking Instructions:
In a small stock pot, heat olive oil and add onion and garlic. Cook until onions are translucent. Add scallops and shrimp. Continue to cook until scallops are firm. Add water. Bring to a simmer. Add tomato paste, Karlsburger Roasted Red Pepper Base and Karlsburger Seafood Base Add Karlsburger Italian Seasoning and Karlsburger Bay Leaves Simmer lightly for 30 minutes. Add surimi and remove bay leaves. Adjust seasoning with salt and pepper if necessary. FOR GARLIC TOAST: Slice French or Italian bread at an angle ½” thick. Brush with melted butter and sprinkle with Karlsburger Garlic and Cheese Topper Place under broiler and brown until moderately crisp.
