Chicken Enchiladas

Yields 38 - 6" Enchiladas

Ingredients
4 lbs. Raw Chicken Breast
32oz Sour Cream
2- 15 oz. cans Seasoned Black Beans, drained and rinsed
1-12 oz. pkg. Frozen Corn
2- 10 oz. cans Diced Tomatoes with Chilies
2 Jalapenos, Minced
½c Cilantro, Chopped
1 Juiced Lime
1 tsp. Karlsburger Ground Cumin
1- 16oz pkg. Shredded Cheddar Cheese or Mexican Cheese
1 Bunch Green Onions, finely chopped
2 ½ oz. Karlsburger Special Recipe Chicken Base
3 quarts Water

2 pkgs. 6” Flour tortillas

Sauce:
2 Tbsp. Karlsburger Three Amigos Southwestern Base
8 cups Water
One Yellow Onion, chopped
1 ½ Sticks Butter
1c Flour
3 Tbsp. Garlic, Chopped
1-10oz can Petite Diced Tomatoes
1tsp. Karlsburger Chili Powder
1 tsp. Karlsburger Ground Cumin
½ cup Cilantro, Chopped
1 Tbsp. Karlsburger Special Recipe Chicken base
1 Jalapeno, Chopped
Salt and Pepper

1 lb. Shredded Cheddar cheese

Cooking Directions
In a large pot, bring 3 quarts of water to a boil and add 2 and 1/2 oz. of Karlsburger Special Recipe Chicken Base Add the chicken breast to the stock and boil until chicken reaches an internal temperature above 150 degrees F. Drain stock and shred chicken breast while still warm. Mix the chicken with the green onions, jalapeno, black beans, diced tomato, corn, sour cream, lime juice, cumin, and shredded cheese until thoroughly combined.

Preheat oven to 300 degrees F. Spray a 2” hotel pan or casserole dish with cooking spray. Spoon about 5 tablespoons of chicken mixture in a row across the tortilla and roll up leaving the ends open. Then place in a row in the sprayed pan. Repeat until mixture is gone; about 38- 6” tortillas will be filled. Cover with Aluminum foil and bake covered for one hour.

For Sauce
Bring 8 cups of water to a boil and then add 2 Tbsp. of Karlsburger Three Amigos Southwestern Base to make Three Amigos stock. Meanwhile melt butter in a sauce pan on the stove. Once melted add garlic and simmer for 2 minutes. Then add flour and cook until you begin to smell a nutty aroma. Reduce to medium heat and whisk in the Three Amigos stock until smooth. Then simmer until thickened. Once thickened add tomato, chicken base chopped cilantro, cumin, chili powder, yellow onion and jalapeno. Using a hand wand puree the sauce until smooth.
Once enchiladas reach 150 degrees F, remove the aluminum foil, and ladle sauce over them and sprinkle with cheese. Return to the oven uncovered until the internal temperature reaches 165 degrees F.
