Marsala Sauce: use on poultry and winged game

Ingredients & Instructions

Ingredients:
  • 1 Tbs. Minced Garlic
  • 1 Tbs. Minced Shallot
  • 1 Tbs. Butter
  • 1 c. Sliced Fresh Mushrooms
  • 2/3 c. Marsala Wine
  • 2 c. Karlsburger Demi Glace
  • ½ c. Heavy Cream

Cooking Instructions:
In a medium pan, sauté garlic and shallots until lightly browned, add mushrooms and Marsala wine. Simmer mushrooms until Marsala is reduced by ¾. Add cream and simmer until reduce by ½. Add Karlsburger Demi Glace and return to a simmer. Season to taste and hold for service.
