Hearty Beef Vegetable SoupIngredients & Instructions
Ingredients:- 1 qt. Hot Water
- 4 oz. Karlsburger Beef Base
- 1 lb. Round Steak, medium diced
- 3 qts & 2 c. Hot Water
- 1 14 ½ oz. can Whole Tomatoes, small diced
- 10 oz. Potatoes, large diced
- 4 oz. Carrots, sliced 1/8” thick
- 4 oz. Onions, small diced
- 2 oz. Celery, medium diced
- 1 Tbs. Sugar
- 6 oz. Zucchini, large diced
- 6 oz. Yellow Squash, large diced
- 4 oz. Frozen Baby Lima Beans
- 4 oz. Frozen Whole Kernel Corn
Cooking Instructions:
In a heavy 8 qt. sauce pan, combine 1 qt. water, Karlsburger Beef Base and meat. Simmer over medium heat, loosely covered; for approx. 30 – 45 minutes. Add remining water, tomatoes, potatoes, carrots, onions, celery, and sugar. Heat to boiling over medium heat, stirring frequently. Reduce heat and gently boil until vegetables are almost tender; about 20 – 30 minutes. Stir in remaining ingredients and continue boiling until vegetables are tender; about 8 – 10 minutes. Serve hot, garnished with herbed croutons or chopped fresh parsley.
Yield: 1 ¼ gallons or approx. 29 – 6 oz. servings.
