Recipe Description
Green Peppercorn Sauce: Use on sauteed or grilled Meats!Ingredients & Instructions
-Sauteed or Grilled MeatsIngredients:
- 1 Tbs. Minced Shallots
- 1 Tbs. Minced Garlic
- 1 Tbs. Butter
- 1 oz. Cognac
- ¼ c. Brined Peppercorns, with liquid How to brine Peppercorns
- 2 c. Karlsburger Demi Glace
- ½ c. Heavy Cream
Cooking Instructions:
In a medium pan, sauté shallots, peppercorns and garlic in butter until lightly browned. Remove from heat and add cognac and peppercorn liquid. Return to heat and bring to a simmer, add cream. Bring to a simmer and reduce by ½. Add Karlsburger Demi Glace and return to a simmer, season to taste and hold for service.
