Uniformly ground, spice, light-gray to speckled black-gray in color, possessing a distinctive, penetrating odor, a hot, biting and very pungent taste. Slightly coarser than restaurant grind. Ground from the dried, immature, deep dark-brown to black, deep set, wrinkly berries of Piper nigrum L.
