Recipe Description
Bigarade Sauce - Perfect for Duck, Pheasant, Partridge and PoultryIngredients & Instructions
Ingredients:- 1 Tbs. Butter
- 1 Tbs. Minced Shallots
- 1 Orange
- 1 Lemon
- 1 Tbs. Brown Sugar
- 2 c. Karlsburger Demi Glace
- 1 oz. Grand Marnier or Cointreu
- 1 oz. Cognac
- 4 oz. Water
Cooking Instructions:
Zest and juice the lemon and orange. In a medium pan, lightly sauté shallot and lemon zest in butter until slightly browned, remove from heat and add Cognac and Grand Marnier. Add the juices of the fruit and water, cook until reduced by ¾. Add brown sugar and Karlsburger Demi Glace and bring to a simmer. Strain, add orange zest and season to taste, hold for service.
