Albondigas (Meatball) Soup

Recipe Description
A classic Mexican soup made with meatballs (albondigas), a variety of veggies and chicken base.Ingredients & Instructions
Ingredients:- 2 lbs. Meatballs (cooked or fresh)
- 1 Onion, large diced
- 1 Celery Stalk, diced
- 3 Garlic Cloves, chopped
- 1 Green Pepper, diced
- 1 Red Bell Pepper, diced
- 2 oz. Oil or Butter
- 2 Gal. Water
- 6 oz. Karlsburger Chicken Base
- 2 c. Converted White Rice
- 1 Diced Large Tomato
- 2 oz. Tomato Paste
- 2 16 oz. Can Hominy, drained
- 1 lb. Frozen Whole Kernel Corn
- 2 Tbs. Karlsburger Fajita Seasoning
- 2 Karlsburger Bay Leaves
- 4 oz. Karlsburger Three Amigos Southwest Base
Cooking Instructions:
In a large soup pot, cook diced onion, garlic, celery & peppers in oil or fat until lightly browned. Add water and Karlsburger Chicken Base and bring to a simmer, stirring occasionally. Add remaining ingredients except meat balls and bring to a simmer, stirring often. Add meat balls, return to a simmer and hold for service or chill immediately.
*If using freshly rolled meatballs, simmer than in the water prior to making the soup and strain away any floating material & rendered fat, but save the water.
